Carrots cost less than most vegetables. Roasted carrots are easy to make.
What you need:
- 2 pounds of carrots
- 2 tablespoons of olive oil
- 1 teaspoon of salt
- ¼ teaspoon of pepper
What you do:
- Turn on the oven to 425°F.
- Wash the carrots. If they are big, peel and cut them into smaller pieces.
- Put the carrots in a bowl and mix with olive oil, salt and pepper.
- Spread the carrots in one layer on a baking sheet.
- Put the baking sheet in the oven. Cook for 18-20 minutes for small carrots, or 25-30 minutes for bigger ones. Poke with a fork to see if they are soft.
- Sprinkle parsley on top if you want, then enjoy!
