Easy roasted carrots

Carrots cost less than most vegetables. Roasted carrots are easy to make.

What you need:

  • 2 pounds of carrots
  • 2 tablespoons of olive oil
  • 1 teaspoon of salt
  • ¼ teaspoon of pepper

What you do:

  1. Turn on the oven to 425°F.
  2. Wash the carrots. If they are big, peel and cut them into smaller pieces.
  3. Put the carrots in a bowl and mix with olive oil, salt and pepper.
  4. Spread the carrots in one layer on a baking sheet.
  5. Put the baking sheet in the oven. Cook for 18-20 minutes for small carrots, or 25-30 minutes for bigger ones. Poke with a fork to see if they are soft.
  6. Sprinkle parsley on top if you want, then enjoy!
