Erika and Victor’s comfort food is parmesan orzo. It can be a side dish to meat dishes. It is delicious as leftovers.
What you need:
- 3 tablespoons butter
- 1 ½ cups orzo
- 3 cups chicken broth
- ½ cup grated parmesan cheese
- 1/3 cup fresh chopped basil
What you do:
- Melt the butter in a pot.
- Add the orzo. Sauté for two minutes.
- Add the broth. Bring to a boil.
- Reduce the temperature. Cover the pot. Simmer for 20 minutes.
- Mix in the cheese and basil.
